recipe: potato arugula pizza (inspired by zinc cafe)
this is my favorite thing to order at zinc, and i never get sick of it. the hearty potato, the spicy arugula and pepper flakes, the refreshing balsamic bite… mmmm. and best of all! it is simple to make at home!
ingredients:
whole wheat pizza dough (trader joe’s sells pizza dough for 1.99!)
arugula
white cheddar cheese
a few red potatoes (number depending on the surface area of the pizza you are making)
extra virgin olive oil. balsamic vinegar. salt. pepper. chili flakes.
preheat the oven to 450°F.
begin by slicing the potatoes into thin slices. (the thinner the better).
roll out the pizza dough. brush a little bit of olive oil around the center of the pizza. add grated cheese and sprinkle chili flakes. lay potatoes across the pizza. splash (lightly) olive oil across the tops of the potatoes and bake for about 25 minutes.
when finished let cool. top with arugula. sprinkle olive oil and balsamic. season to taste with salt and pepper.
